Classic ways to cook it
- Steamed: score the body, lay ginger and scallion over it, steam 8 minutes, finish with soy and smoking oil
- Pan-fried: salt for 15 minutes, then fry until both sides turn crisp and deep gold
- Red-braised: sear, then simmer in soy, dark soy, sugar and rice wine for 10 minutes
- Soup: with pickled greens, simmered until the broth turns milky
Storage
Keep at -18°C for up to 12 months. Thaw slowly in the fridge for four to six hours and cook within a day; do not refreeze.
